So I’ve been trying to eat more of a plant based diet recently. I’m mostly dairy free (a little here or there - mostly Greek yogurt). I’ve also removed as many grains as possible (still have a little rice or rice flours). I’ve been mostly gluten free for more than a decade, but I’m being stricter about that now too (i.e., no cross contamination). I’ve gotten some new flours to try and bake with including cassava flour (which is apparently a root). Tonight I made these vegan & #aipdiet pumpkin muffins. The taste is great, but they’re much gummier than I expected. But considering that I don’t get to eat things like this normally, it’s a nice treat. I’ll be taking one to work tomorrow to go with my “vegan burrito.”

Recently, I listened to @thisamerlife’s show called “The Show of Delights.” And let me tell you, it was a delight! It came at exactly the right time for me. I wrote more on my blog (link in bio), but the short version is - I’m out of practice at finding the delight and joy in the everyday. It used to be easy for me. After a couple of hard years, that muscle has severely atrophied.
